Urban Greens serves new chef-driven concept Trays

This aims to offer hot meal options that bridge the gap between lunch and dinner.

Urban Greens has launched Trays, a chef-driven concept designed by Finn Tonry, MOB Kitchen Chef and Head of Food at Urban Greens, to offer hot meal options perfect for both lunch and dinner.

Each Tray features a hot protein paired with a warm grain and a curated selection of veggies, complemented by a new addition to the Urban Greens lineup: Scoops.

Scoops is a new flavour-packed, nutrient-rich topping that adds between 2g and 4.5g of protein per scoop. Each Tray includes one scoop, with the option to add more for a customised dining experience.

For those who love to mix and match, Urban Greens is also introducing a fully customisable “Build Your Own Tray” option, giving diners the freedom to craft their meal with a selection of proteins, pickled veggies, and signature crunchy toppings.

Menu highlights include SINALOA, a pulled chili brisket with Camargue red rice, sambal feta, avocado, tajin sweetcorn, pickled onions, tortilla chips, crispy onions, coriander, and a lime wedge.

It also has AEGEAN, a honey-dijon chicken with UG spiced grains, Tzatziki (Persian-inspired using strained yoghurt), cucumber, cherry tomatoes, pickled onion, parsley, hazelnuts, sesame seeds, and a lemon wedge.

Lastly, the UMAMI 2.0, a honey-dijon chicken with Camargue red rice, miso peanut, kimchi, shredded kale, coriander, peanuts, sesame seeds, and a lime wedge.

Vegetarian and plant-based swaps are available for all dishes.

Trays are now available at all Urban Greens London locations, priced at £10.95 or £9.95 during a soft launch period until 8 May—served alongside the brand’s signature salad bowls.
