LEON resets spring menu with bigger rice boxes and returning favourites
The chain adds a Mushroom Magic rice box and new chef-led sauces.
Following John Vincent’s return to ownership, LEON has continued its attempt to reshape its menu, with new items rolling out this spring.
After reintroducing its fish finger wrap last month, the chain will add a Mushroom Magic rice box alongside the return of its grilled chicken rice boxes, which were part of its original core offering.
The updated menu places more emphasis on larger portion rice boxes, with an increased focus on fibre, vegetables, and fermented ingredients.
A chef-developed range of sauces also forms part of the changes, including a return of salsa verde and a new smoky romesco sauce made with roasted red peppers, pumpkin seeds, and sherry vinegar.
Mushrooms are being used as a key plant-based ingredient in one of the new boxes, prepared with garlic and parsley to provide a meat-like texture and flavour.
The chicken dishes have also been revised, with chargrilled thigh meat now marinated in garlic, parsley, lemon, and olive oil.
The rice boxes are structured around brown rice, vegetables, and fermented elements such as kraut and pickled carrots, along with slaw, seeds, and lemon.
The range includes combinations such as aioli chicken, satay chicken, salsa verde chicken, mushroom magic romesco, and mushroom magic aioli.
Smaller rice boxes are also being introduced with similar fillings in reduced portions, along with items like a chicken wrap with aioli, a chargrilled chicken salad with spiced vegetables and grains, and side dishes including slaw and black beans.
A matcha-based strawberry drink is also part of the updated spring menu.
