Sticks’n’Sushi lands in Birmingham with first Midlands restaurant
The new site will seat around 250 guests and create 60 jobs.
Sticks’n’Sushi will open its first Midlands site this autumn at Three Chamberlain Square in Birmingham, as part of the £1.2b Paradise development.
The 250-seat restaurant will take a ground-floor unit with an adjoining terrace and is expected to employ around 60 staff locally.
The interior has been designed by Danish studio OEO Studio, known for projects including Noma Kyoto and Sticks’n’Sushi Tivoli Gardens in Copenhagen.
The design will combine Japanese and Danish influences, using timber and structured layouts, with warm, layered tones throughout.
The menu will feature sushi, sashimi, salads, and grilled skewers, offered both à la carte and in set menus for dine-in and takeaway.
Dishes include beef tataki with miso aioli, truffle ponzu, and temaki setto; DIY sushi rolls with lobster, wagyu tartare, and avocado; plus grilled items such as miso-glazed black cod, Iberico pork, and lamb with garlic butter, spring onion, and soy.
The drinks offering will include sake, Japanese teas, cocktails, spirits, and beer, including a Japanese rice lager made in collaboration with Danish brewery Mikkeller.
