Cornish Bakery to open six sites as it debuts RISE concept

The company says each site will have a custom design linked to its setting.

Cornish Bakery has confirmed it will open six new sites by May 2026, including its first location in Wales, its largest bakery to date, and the launch of a new format, “RISE by Cornish Bakery.”

The openings are scheduled for Newbury and Lincoln in March; Betws-y-Coed in Wales, Gunwharf Quays in Portsmouth, and Wells in April; and Witney in May.

The company said more sites will be announced later.

It plans to invest £3.5m in the new bakeries, with a further £500,000 allocated to refurbish existing branches in West Bay, Lyme Regis, Ambleside, and Bourton-on-the-Water.

Each new site will have a custom interior design intended to reflect the building and local setting.

The Betws-y-Coed bakery, on the edge of Snowdonia, will be the company’s first Welsh location and its largest property to date. The site will also introduce the new concept “RISE by Cornish Bakery.”

At Gunwharf Quays, Cornish Bakery will move into a new two-storey unit as part of the outlet’s redevelopment, whilst keeping its existing takeaway kiosk. The new site will also operate under the RISE concept and include an orangery and outdoor terrace.

The RISE format will expand the menu beyond coffee and baked goods to include small plates for brunch, lunch, and early evening service, as well as beer and wine.

The company said these sites will be larger, with some venues up to 3,500 square feet, seating for up to 196 people, and one multi-floor location with rotating art displays.
